Fruit Smoothie

1/2-3/4 cup fruit juice - I use one of the V8 Splash juices or else apple juice
1 cup silk tofu (or yogurt - Yoplait Light fruit flavors are nice)
1 ripe banana
2 cups fruit or berries - frozen is fine; strawberries, cherries, raspberries and peaches are my favorites

Pour the juice into the blender jar first, and then add remaining ingredients.  Blend until very smooth (2-3 minutes if you’re using frozen fruit).  I like to make this the night before and refrigerate overnight, making it nice and cold in the morning.  (Using frozen fruit makes it colder to begin with.  Also, you can peel and freeze bananas ahead of time to use for your smoothies.  I recommend breaking or cutting them into in 1-inch chunks.) 

This is enough for two servings, so I usually put half of it into a plastic container in the freezer.  The frozen ones are perfect for taking to work and having at lunchtime or as a mid-afternoon energizer.  Or freeze it in one-cup plastic containers and eat with a spoon.
