Johnny-Cake (Cornbread)

1-1/4 cup all purpose flour
1 cup yellow corn meal
4 teaspoons baking powder
1 teaspoon salt
2 Tablespoons sugar
3/4 teaspoon baking soda
2 eggs, beaten
1-1/4 cup buttermilk
3 Tablespoons melted shortening (or lard)

Sift dry ingredients together into a large mixing bowl.  Beat eggs well in small bowl, add buttermilk and melted shortening.  Add liquid to flour mixture and mix well.  Pour into greased 8-inch square pan (I use cast iron skillet) and bake at 425 for 25-30 minutes.  Cut into squares, split and serve hot with butter and syrup.
