Danish Aebleskivers
Brunch | Scandinavian Recipes

2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
2 Tablespoons sugar
3 egg whites
2 cups buttermilk
3 egg yolks

Mix dry ingredients together in large bowl.  Beat egg whites until stiff.  Add buttermilk and egg yolks to dry ingredients, then fold in beaten egg whites.  Fry in greased aebleskiver pan at medium to medium-low temperature.  Serve with powdered sugar, applesauce, jam or honey.
