Candy
We
don't make a lot of candy, but truffles are an annual holiday
tradition at our house -
great for gifts if you can give them up!

This candy-making tip was published in the World Wide Recipes newsletter and
I thought it was a good one to put in my candy section of recipes: When
making any candy from scratch, NEVER try to make it during bad weather or
when the humidity keeps fluctuating. Also, when the candy is divinity, make
sure that all ingredients are at room temperature, including the eggs.
Remember for candies that have to set up (divinity, fudge suckers, etc.)
always have your pans or molds at room temperature and ready to use BEFORE
you begin. If your fudge doesn't set up, carefully follow the recipe and
remember not to add the vanilla or other extracts until just before you pour
it. Extracts stop the cooking process.
