Lemon Bars
Cookies & Bars

My Mom used to say that she got this recipe from me, and I'm quite sure that I got the recipe from her!  Wherever it came from, it's really good!

Crust
1/2 cup butter, softened
1 cup flour
1/4 cup powdered sugar

Mix together well and pat into bottom of 8" square baking pan.  Bake at 350 for 10 minutes.
 

Filling
Sift together:
1 cup sugar
2 Tablespoons flour
1/2 teaspoon baking powder
1/3 teaspoon salt

Add:
2 eggs, well beaten
2 Tablespoons lemon juice plus grated rind of one lemon

Place on baked crust.  Bake for 15-20 minutes at 350.
 

Frosting
1-1/2 cups powdered sugar
2 Tablespoons melted butter
1 Tablespoon milk
1 teaspoon vanilla

Mix frosting ingredients together; frost bars when cooled, then cut into small squares.  Makes approximately 20-24 bars.
