Balsamic Peaches

This is a great combination of flavors that may sound unusual, but be sure to try it - it makes a wonderful dessert and is very easy to fix. The recipe was published on 08-16-04 in the World Wide Recipes ezine by fellow "Recitopian" and subscriber Jan Esterly.  When I fixed them for Jay we liked them so well that I emailed Jan and asked for her permission to publish her recipe on our website. Thanks Jan!

As Jan said in her submission to the WWR ezine, "The ingredients may sound bizarre but, trust me, it is a wonderful mix of flavors...and great over grilled pound cake or ice cream."

6 peaches, peeled, pitted, and sliced into thick wedges
3 Tablespoons (45 ml) balsamic vinegar
3 Tablespoons (45 ml) brown sugar
1/2 tsp (2 ml) freshly ground pepper, or to taste 

Combine all the ingredients in a non-metallic bowl and toss to combine.  Chill in the refrigerator for 2 hours before serving.  Serve with heavy cream, whipped cream, or vanilla ice cream if desired. Serves 4 to 6.

Dorothy's Note: If you want a little more "sauce" you can add more balsamic vinegar and brown sugar in proportion....
