1 Tablespoon coriander seeds
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
6 whole cloves
1/2 teaspoon brown mustard seeds
1 Tablespoon whole black peppercorns
everything except for the peppercorns and the salt into the spice grinder, grind
until the cloves are coarsely ground. Add
peppercorns, grind for a few more seconds so that they are coarsely ground.
salt on the salmon fillets, then pat spice mixture thickly onto salmon.
Coat both sides in this way, then sauté salmon in a mixture of butter
and olive oil. Spicy coating will
become crusty; do approximately 2-3 minutes on each side (depending on
thickness) or just until salmon is
cooked to your preference (we like ours fairly rare).
