Chile Potato Burritos
Green Chile Recipes

2 cups mashed potatoes
1 cup shredded Colby-Jack cheese
2 Tablespoons chopped green chile
1 teaspoon ground cumin
salt and pepper to taste
1 clove garlic, minced
8 - 6" flour tortillas
1/2 cup red chile sauce or any good red enchilada sauce

Preheat oven to 350 F. Heat the mashed potatoes (either in a small saucepan or in a bowl in the microwave). In a medium-sized mixing bowl combine the mashed potatoes, 3/4 cup of the cheese, green chile, cumin, salt, pepper, and garlic. Spoon evenly into tortilla shells and roll up. Place rolls side by side in a 8"x8" baking pan. Spread red chile sauce evenly over the top and sprinkle remaining cheese on burritos. Bake at 350 until cheese is melted and bubbly.

Serves 4.
