Burritos are a staple for great suppers, especially quick and easy for a week-night meal.  These are really basic and the filling can be prepared in quantity and frozen to use later.

In small saucepan, combine refried beans, chopped green chile, cumin and chili powder to taste. Heat over medium heat for 4-5 minutes until warm (stir frequently).

Divide bean mixture onto tortillas, topping with shredded cheese. Roll up and top with more shredded cheese if desired; you can place in oven at low heat for a few minutes to keep warm until ready to serve. When ready to serve, put two burritos on each plate, garnish with shredded lettuce and chopped tomato. Serve with rice.

Optional: Add 1 pound ground beef  or chopped cooked chicken to bean and chile filling. Filling may also be used with tacos.
