9" pie crust, unbaked
1 Tablespoon butter
1 cup shredded cheese (Swiss, Colby or Monterey Jack)
1 cup chopped frozen green chile (mild or hot; thawed and drained)
4 eggs
2 cups heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon ground red (cayenne) pepper
1/2 teaspoon ground cumin
fresh cilantro sprigs for garnish

Preheat oven to 425 . Prepare pie crust, spread with butter. Spread cheese and green chile over bottom of crust. Beat eggs with cream, salt, cayenne pepper and cumin; pour over cheese and green chile in pie crust. Bake for 15 minutes, then reduce heat to 300 and bake for 40 minutes longer. Garnish with cilantro, serve with a green salad.
