Simple and tasty! This is based on
a recipe that I got from a dear co-worker many years ago; Jay loved it and it
began making regular appearances on our "Monday Night Chicken" menus!
3/4 cup Dijon mustard
1 Tablespoon white wine
1 cup fine bread crumbs
1/2 cup Parmesan cheese
1 Tablespoon chopped fresh parsley
2 Tablespoons dried marjoram
1/8 teaspoon dried thyme leaves
1 teaspoon minced garlic
chicken pieces
Mix the Dijon mustard and white wine together. In a
separate bowl, combine the dry ingredients. Dip chicken pieces into the
mustard-wine mixture and then coat with the bread crumb mixture. (This will coat
approximately 6-7 thighs/breasts/drumsticks.)
