Jay's Szeged-Balsamic Chicken

1 whole chicken (3.5-4.5 pounds)

Mix the following together and use to coat the chicken before baking:

1/4 cup Szeged Chicken Rub
     (we find this at Lund's grocery store, let me
      know if you can't get it!)
1/4 cup olive oil
1/4 cup balsamic vinegar
 

Wash chicken and pat dry, removing giblets.  Place chicken on upright chicken roasting pan (we call it a "butt pan"). Cover chicken liberally with the chicken rub and balsamic mixture.

Bake at 350 for 1 to 1-1/2 hours, depending on size of chicken.
