Jenny's Red Beans & Rice

Our daughter Jenny lives in Baton Rouge and is a wonderful cook - this is her recipe for authentic Louisiana Red Beans & Rice. If you can't find Tasso, look online to order or substitute smoked pork or sausage.
 

Ingredients:

  • Dried beans

  • Baking soda

  • Water
     

  • 1 onion

  • Several cloves of garlic

  • Tasso (or smoked pork, sausage, etc.)

  • Bell pepper

  • Celery seasoning

 

Preparation:
Soak beans overnight in water with baking soda. Rinse.

In a large pot, place onion, garlic, Tasso, bell pepper, celery seasoning, beans and water to cover. Bring to a boil and then simmer for a few hours. Serve over rice.
