1 head iceberg lettuce, chopped
1/2 red onion, chopped
3/4 cup cauliflower, chopped
3/4 cup carrots, chopped
1/2 cup chopped green bell pepper
1/2 cup chopped sweet red bell pepper
2 cups grated sharp cheddar cheese
10 strips bacon, cooked and chopped
1 1/2 cups real mayonnaise
all ingredients except for the mayo in the order given in a 13x9 Tupperware
container. Spread mayonnaise over top. Cover and refrigerate overnight.
*Note: I sometimes add
frozen peas to this. I also chop the cauliflower and broccoli quite fine, no
large pieces. And, it looks prettier if you top with mayo, then sprinkle
with shredded cheese and bacon. Makes a great do-ahead potluck salad!
