Chilli Chicken Salad

Ingredients:

One package romaine lettuce with radicchio
Chopped green onions (about 6-7)
Chopped watercress (about cup)
Chopped fresh basil (half a package)
Green grapes
1 large sweet red bell pepper, diced
Broccoli flowerets cut into small bite-sized pieces

Combine first seven ingredients in large salad bowl.
 

Sauce:

1 Tablespoon olive oil
1 cup sweet red chilli sauce (found in Asian grocery stores - "Sweet Red Chilli Sauce for Chicken")
1 pound chicken breasts, diced
 

Pour olive oil into pan on high heat, add chilli sauce and stir. Add diced raw chicken and cook, stirring, for about five minutes or until chicken is done but not overdone. (You could just coat leftover cooked chopped chicken with the heated chilli sauce also.)

Strawberries, hulled and sliced

Add warm chicken to salad along with the strawberries. Enjoy!
 

Note: you can use any salad greens, veggies and fruit that you want with this. Fresh pineapple or kiwi is good; the original recipe called for carrots, green bell pepper, avocados, mushrooms, shredded cheese, etc. - basically use whatever you're in the mood for.
