Stir-Fried Bok Choy

If you're looking for something different in a veggie with dinner, try stir-frying some bok choy. This is quick, easy, and tasty. If you don't have all the ingredients, use whatever Asian sauces and oils you have on hand - experiment with flavors!

Ingredients:
4 strips bacon, cut into 1-inch pieces

1 large head bok choy, or half a dozen baby bok choy

Sauce:
3 Tablespoons bacon fat
1 Tablespoon sesame oil
1 Tablespoon rice vinegar
1 Tablespoon soy sauce
2 teaspoons hot Peri Peri sauce (available at Cost Plus World Market) -
    alternately, use Sambal Oelek, available at Asian grocery stores

 


Stir-Fried Bok Choy
Instructions:
Heat wok; cut bacon strips into 1-inch pieces and sauté in wok until cooked as desired. Remove cooked bacon with slotted spoon to a small plate or bowl.

Chop bok choy into 2-inch pieces; wash thoroughly and drain (or use salad spinner to remove excess water). Add sauce ingredients to bacon fat in heated wok and blend gently with whisk, then add chopped bok choy.
 


 

Using two large spoons, rotate bok choy in wok to coat with the sauce for about one minute. Cover wok and let steam over medium heat for 5-7 minutes. Serve hot.
